My go to spring recipes

Spring is finally here! The days are getting longer, and the temperature is warmer. What better way to celebrate than with food?

Can you hear that? It’s the sound of spring. Chirping birds and a lot more sunshine in this part of the northern hemisphere beckons everyone to venture outside or, at the very least given current lockdowns, to open their windows and let the fresh air in.

Around the beginning of the pandemic, I turned to My Go To Comfort Foods. Now, as things seem to be (touch wood if you’re superstitious) getting better, I’m in the mood for some springtime recipes. Here are my favourites, with links to lots of amazing recipes!


A quiche isn’t something that I make very often, but when I do… the pre-made version at the supermarket just doesn’t compare.

My favourite kind of quiche has tender, roasted or caramelised vegetables and a tangy, soft goats cheese that cuts through the richness of the pastry and savoury custard. If you’re a meat eater, you can always rely on classics such as quiche Lorraine.

Simply pair with a nice side salad and vinaigrette, and maybe a chilled glass of white wine if you like, and you’ve got a delicious and sophisticated lunch or dinner.

Nicoise salad

This is dish that instantly brings back memories of French holidays and my mum ordering this for herself. She received a huge platter of salad and relished every mouthful! I’m not the biggest fan of tuna but I do enjoy salmon, and I’ve found that this version works just as well. That being said, if you’re not a fan of fish then a plant based version (with or without the boiled eggs) will also work well!

I’ve previously written about my love of a comforting risotto, and during the spring I like to substitute vegetables like butternut squash for spring greens like asparagus and peas. A risotto can be a labour of love but, it’s worth it.

Anything chocolate

I always look forward to Easter and promise of plenty of chocolate! Now don’t get me wrong, I’ve always got some sort of chocolate in the cupboard, but with the return of celebrity bake off I’m in a baking mood and you can never go wrong with something chocolate based.

  1. This post has made me feel so ready for spring. 🙂 As the weather gets slightly warmer, I love making colourful salads. And, I agree, chocolate is definitely necessary at this time of year, haha. The Easter chocolate bark sounds great.

  2. I LOVE spring a lot and I agree on the fact that there is no better way to celebrate than with food. These are amazing food ideas. I love chocolate cakes and this reminded of the fact that it’s been so long since I had a chocolate cake. I want one now haha.


  3. I absolutely love risotto but haven’t had a really good one in literally years! The last one I had that blew me away was a mushroom and garlic risotto a couple of years ago! I definitely need to have a risotto soon – Spring seems like a great time to have one as well x
