My go to breakfasts

Breakfast – the most important meal of the day, or a marketing stunt? Whatever the case may be, here are the favourites I have time after time.

There’s been some debates about breakfasts recently. In my last post, I looked at intermittent fasting, which could exclude this meal entirely – though only in the sense of the traditional foods associated with breakfast, as any meal you have after a fast is breaking it. Personally, I enjoy a good breakfast and it’s part of my morning routine, but what do I like to eat?

Yogurt and granola

I’ve been trying to cut down on my dairy since my vegan experience, but that doesn’t mean that I can’t enjoy this breakfast. There are tonnes of plant based yogurts available these days and if you want to avoid soy, I’d recommend the Coconut Collaborative range.

I top this yogurt with a relatively plain granola, which I sometimes make with a mix of nuts and spices like cinnamon and vanilla. Sometimes, when I’m feeling a bit lazy, I get the Kellogg No Added Sugar Granola. Then I add fruit, such as a sliced banana or a handful of berries, sliced almonds, pumpkin seeds and the best bit. A huge drizzle of peanut butter!

What can I say? I’m a millenial!

I tend to only have this about once a week though and, sadly, my avocado’s are not always Insta worthy as they can be a little but underripe. First world problems.

The other healthy breakfast staple! I try to go for peanut butters that only contain peanuts, and maybe a dash of salt and sustainable palm oil.

With the bread, I’m really into Dutch rye bread at the moment, and I find that one slice keeps me full! If I’m feeling fancy (which is code for if I remember), I might sprinkle some ground cinnamon on my banana slices.

Porridge

I tend to have this less in the summer months, but in the winter…it’s essential! As I try to cut down on my diary consumption, I use a plant based milk and gently cook the oats to ensure a smooth and creamy consistency.

My plant milks of choice are oat, unsweetened almond or cashew. I tend to top with some vegan chocolate spread, which throws the healthy aspect of this breakfast out the window, throw on some berries, nuts and pumpkin seeds. I get through a lot of pumpkin seeds.

Croque Madame

This is the wild card, and is what I make for a lazy weekend breakfast in bed. Not every weekend though.

It’s got white bread (a delicious, crusty, freshly baked French pain de campagne), ham, cheese, béchamel sauce and a fried egg on top for good measure. It breaks ‘the rules’, so to speak.

I don’t believe in labelling food as ‘good’ and ‘bad’ though, as this is frankly to good to ever be bad.

The French are onto something here.

  3. Now I’m hungry! On most days, I will be really boring and having Weetabix! On the weekend I like to have a smoothie bowl as I have a bit more time!

    1. Weetabix brings back a lot of memories! I’ve tried smoothie bowls in the past and never seemed to get them right, I think I used to make them too runny!

  4. First of all these photos are so yummy! Most of my breakfast is muesli with fruit because I have to rush to work early. On weekends it’s a little richer. I have managed a few dumplings with peanut sauce. 🙂

  7. I would happily eat any of these. Love a poached egg on toast too. That said, I haven’t regularly eaten breakfast since I was 14 (except when pregnant) and rarely notice. I find it unsettles my stomach and then I’m either hungry again at 11am or I don’t want lunch but snack all afternoon. So just a couple of cups of good coffee are my regular kick start to the morning.

    1. I have a couple of friends who do the same thing! I actually found that during lockdown, I was holding off breakfast by a couple of hours (not having to be up as early is probably why) and I just wasn’t moving as much
